Ingredients
- 6 cups of cooked rice ( preference for Basmati Rice)
- 4 eggs
- 1 chopped medium onion
- 5 cloves of chopped garlic
- 1 tablespoon chopped ginger
- 3 medium shredded or cubed carrots
- Handful of chili peppers
- 1 tsp sliced lemongrass
- Soy sauce to taste
Directions
- Sauté onions, lemongrass, garlic and ginger with oil until it becomes translucent
- Add eggs and fry
- Add the cold rice, carrots, Thai basil and chill peppers
- Season to taste with soy sauce. Garnish with green onions, Thai basil and chili peppers
