Ingredients

  • 6 cups of cooked rice ( preference for Basmati Rice)
  • 4 eggs
  • 1 chopped medium onion
  • 5 cloves of chopped garlic
  • 1 tablespoon chopped ginger
  • 3 medium shredded or cubed carrots
  • Handful of chili peppers
  • 1 tsp sliced lemongrass
  • Soy sauce to taste

Directions

  • Saut√© onions, lemongrass, garlic and ¬†ginger with oil until it becomes translucent

  • Add eggs and fry
