    Americans have potato chips, West Indians have plantain chips.  Plantain chips is a staple


    1. Slice plantains using a box grater or a mandolin
    2. Deep fry in oil until color changes to bright yellow
    3. Don’t over fry or else it will get burned and absorb too much oil
    4. Season with salt and chili powder depending on heat level
