Ingredients
2 cups basmati rice 2 eggs 1 tbsp grated ginger 5 finely chopped garlic Chopped onion 1 tsp chili powder 2 tbsp soy sauce 1 tbsp fish/oyster sauce (more or less depending on taste) Peas Carrots Scallions

Rice is a staple in Carribean cooking. It  accompanys most meals including breakfast. There are many varieties from plain, seasoned, sweet and the list goes on.

Directions

  1. Boil rice, strain and set aside. Basmati rice boils quickly so keep a close eye on it
  2. In a large wok, fry eggs with onions, garlic and ginger mixture until onions becomes translucent
  3. Add vegetables. Depending on peferance you could add cooked chicken or shrimp
  4. Add soy sauce, oyster sauce and/or fish sauce,  and chili powder
  5. Carefully incorporate cooked rice. Refrigerated rice might be easier to work with to avoid clumping
  6. Garnish and serve with accompanying sides or have a by itself
