Ingredients
1 lb medium shrimp 2 cup fine shredded coconut flakes (regular sweetened flakes will work also just don't add additional sugar) 2 cups cornstarch 1 egg 1 cup water (more or less depending on consistency) 1 tbsp onion powder 1 tsp chili powder 2 tsp sugar

What screams taste of the carribean? No other than crunchy and sweet coconut shrimp! Each bite brings you closer to warm weather and sandy beaches. All that’s missing is a cold beverage and sunscreen.

Directions

  1. Devein and peel shrimp leaving tail on
  2. Wash and pat dry
  3. Mix cornstarch, water, egg, onion powder, chili powder,  salt and sugar  together to form a pancake like batter in one dish
  4. Mix coconut flakes and panko bread crumbs in another dish
  5. Dip shrimp in liquid batter and then in coconut mixture set aside
  6. Once all of the shrimp is coated, begin deep frying for 2 minutes until golden brown
  7. Make sure oil is hot and don’t over cook shrimp
