Directions
- Peel and grate cassava in a food processor
- Add grated coconut to cassava
- Add brown sugar, coconut milk, ginger, raisins, nutmeg, essense and butter
- Mix together, taste if more sweetness is desired add more sugar
- Pour in a greased pan so mixture is about an inch high
- Bake at 375• for 45 minutes
- Cut into squares once cooled
