Cassava Pone

Ingredients

  • 4 medium size cassava
  • 1 cup grated coconut
  • 2 cups brown sugar
  • 2 tablespoon grated ginger
  • 2 tablespoon almond extract
  • 1 cup raisins if desired
  • 2 cans evaporated milk
  • 1 teaspoon grated nutmeg
  • 1 teaspoon grated cinnamon
  • Pinch of black pepper
  • 1/2 stick soften butter

Directions

  • Peel and grate cassava in a food processor

  • Add grated coconut to cassava

  • Add brown sugar, evaporated milk, ginger, raisins, nutmeg, extract and butter
  • Mix together, taste if more sweetness is desired and adjust. Cassava is bland and requires a lot of seasoning to change the taste, don’t be afraid to add more

  • Pour in a greased pan so mixture is about 2 inches high

  • Bake at 350• for 1 hour and 30 minutes or until golden brown and the middle of pone is soft

  • Cut into squares once cooled
