  • 1 lb Bora
  • 2 chopped potatoes
  • Chopped garlic
  • Chopped onion
  • Wiri wiri peppers
  • Salt to taste
  • Cuisine: Cooking time: 15 mins Serving: 2 people

    Any dish becomes a West Indian dish with the all too famous bora or Chinese long bean. Bora is a very versatile vegetable that can be prepared by itself or paired alongside Saltfish, shrimp or just added to fry rice for added crunch


    1. Wash bora and cut into 1 inch pieces set aside
    2. In a frying pan sauté onion and garlic until translucent
    3. Add diced potatos and cook for five minutes
    4. Add bora and  sauté
    5. Season dish with salt and wiri wiri peppers
    6. You may add tomatoes if preferred. I find that adding tomatoes produces a little more acidic taste and tangy taste. If that’s what you’re looking for go ahead and add as much as you like
    7. Cook uncovered for approximately half an hour until potatoes are tender and bora is it soft but not mushy
