When I think of barley soup I imagine comfort in a bowl. Is your throat a little sore what would be more soothing than a warm bowl of soup? This version has the benefits in addition to the comfort your body needs. Soup has many beneficial properties to help when you’re not feeling too great or you need an extra boost, it’s basically a melting pot of nutrients with your favorite ingredients. My Version of barley soup has traditional provisions boiled tenderly with grains of barley throughout the broth. And let’s not forget the chicken!

In a large stock pot, combine water, barley and root vegetables that would take the longest to boil, such as potatoes, cassava, eddos then plantains towards the end

Water should cover ingredients to the top, but don’t overfill fill pot

Add steamed chicken if preferred

Season to taste with salt, pepper and herbs so ingredients are infused with flavor

On medium heat simmer until soup comes together, about 30 to 40 minutes
